I wouldn’t really consider myself a vegan, but I do like to eat vegan every now and then. I think it’s mainly because I enjoy certain vegan combinations and also because it involves less guilt from an animal rights point of view.
Vegan Nice Cream is a new favourite. I’m late to the party with this one, but I didn’t know it was so simple. It’s stupid easy.
Bananas: two is enough for one serving
The main component is frozen bananas, which involves you taking regular bananas, putting them in the freezer and forgetting about them until you’re ready to put them in a blender. Then you blitz them and it’s essentially done.
Add berries, cocoa or anything else you like to the blitz machine. Toppings are always fun too.
You can make more than you need for one go and just keep it in an airtight container in the freezer. It’s so quick to make though, so I’d go with ideally just making it from scratch each time.
I made this one on Saturday and just kept it super plain. I added some coconut milk powder, mainly for flavour and then topped it with chia, raspberries, blueberries and gooseberries.
